TAMALE BAKE

AHHHH this recipe — my most fave at the end of last year, beginning of 2023! First discovered it while visiting my girlfriend Alyssa back at the beginning of December in Minnesota, I FELL IN LOVE INSTANTLY. Original recipe credit is 100% from Katie Crokus on Instagram! (@katiecrokus for her original version) PERFECT for families / meal prep / throughout the week!

After making it a few times - I have added and tweaked it to my liking, as can you! I like SPICY and lots of flavor! JD and I both think it tastes better and better as the days go on! I like to top it w/ whatever I have on hand but, here are a few ideas / things I have had it with —

  • plain greek yogurt (always - just like sour scream but higher in protein / less fat!)

  • guac / salsa — whichever I have on hand!

  • shredded lettuce

  • hot sauce / sriracha

AND you can crunch some tortilla chips / quest chips on top of it for an extra crunch! OBSESSED! Hope y’all love it as much as I do! <3

Choose whatever enchilada sauce / spices you like! I tend to switch it up! :)

Here is her exact recipe / ingredients / instructions: I DOUBLE IT EVERY TIME! & add jalapeños + one can of cream corn to the base!

Gluten Free Tamale Pie

⅔ cup GF oat flour (you don’t have to use GF)
½ cup GF yellow corn meal (you don’t have to use GF)
1 tbsp baking powder
¼ tsp salt
2 tbsp avocado oil
1/2 cup unsweetened cashew milk
1 egg
1 can diced green chilies, drained
3 cups shredded chicken (16 oz raw)
1 cup enchilada sauce
1/2 cup light Mexican shredded cheese

Preheat oven to 400. Spray 8x8 pan.

Combine oat flour, corn meal, baking powder, salt, egg, green chilis, oil, milk. Pour into prepared pan and bake 10 minutes.

Remove from oven, poke holes in the semi-cooked tamale layer and pour about half the enchilada sauce over top. Combine remaining enchilada sauce with cooked, shredded chicken. Put this mixture over the contents in the pan, and top with cheese.

Return to oven and cook for another 15 minutes or until golden and bubbly.

Makes 4 servings: 275g each
Macros: 381 calories / 30 carb / 13 fat / 36 protein
